Tip of the Week

2 pounds ground lamb
1 large onion, chopped
2 cloves garlic, minced
2 Tbsp butter
2 Tbsp curry powder
2 ounces almonds, slivered
1/2 cup dried apricots, chopped
1/4 cup chutney
3 slices white bread
1-1/2 cups milk
3 eggs

Preheat oven to 350 degrees F.

Melt the butter in a large heavy skillet. Add the onion and garlic; cook until just soft. Add the lamb and brown. Pour into a large mixing bowl. Add the curry, almonds, apricots, and chutney; mix well. Soak the bread in the milk (reserve the milk). Remove bread from milk and add the bread to the meat mixture. Add 1 egg and blend well.

Place the mixture in a large, lightly greased casserole dish. Beat the remaining 2 eggs with the reserved milk. Pour over the mixture. Bake at 350 degrees for 45-60 minutes, until the casserole is set and lightly browned.
