March 5, 2010, Newsletter Issue #255: Barbecued Bean Casserole

Tip of the Week

1 can lima beans
1 can red beans
1 can navy beans
1 can black-eyed peas
1 (8 ounce) can tomato sauce
1 cup barbecue sauce
1 onion, chopped
1 green bell pepper, chopped
3/4 cup light brown sugar, packed
2 tsp Worcestershire sauce
2 tsp prepared mustard
1/3 cup bacon, cooked and crumbled

Preheat oven to 350 degrees F.

Mix all ingredients except bacon in a lightly greased 2 quart casserole dish. Sprinkle bacon over the top.

Bake, covered for 30 minutes. Remove lid and continue baking for 1 more hour, or until thickened.
