African Chicken

4 pounds chicken pieces of your choice
1/4 cup vegetable oil
1 tsp salt
1 tsp curry powder
1 onion, peeled and sliced
1 red bell pepper, cut in strips
1 tomato
1-1/2 cups uncooked rice
1/4 cup crunchy peanut butter
1/4 cup warm water

Brown chicken in vegetable oil in a large frying pan. Remove chicken and set aside. Remove all but 2 Tbsp of oil and drippings in pan. Stir in curry powder and salt. Add the onion, red bell pepper, and tomato. Cover and simmer 5 minutes. Return chicken to pan. Cover. Simmer until chicken is tender. Remove chicken to large platter. Blend peanut butter and water. Stir into pan, heat to boiling. Spoon sauce and vegetables over chicken.
