1-1/2 pounds Roma tomatoes, seeded and chopped
8 ounces FRESH mozzarella cheese, cut into short strips
3 Tbsp olive oil
2 tsp red wine vinegar
1 clove garlic, minced
1/2 cup chopped fresh basil
12 ounces angel hair pasta
Mix tomatoes, mozzarella, oil and vinegar and garlic in a bowl. Season with salt and pepper. Let stand 1 hour at room temperature. Add fresh basil.
Cook pasta according to package directions, drain. Return pasta to cooking pot; add tomato mixture and toss gently to blend.
