Cassoulet

1 Tbsp Olive oil
1 Onion, diced
4 cloves Garlic, minced
1 can Great Northern beans
2 cups Chicken broth
1-1/2 tsp Thyme
1 Tbsp Tomato paste
1 pound cooked pork, chopped
1 link (4 ounces) garlic sausage, cooked & sliced
1 cup fresh Bread crumbs

Preheat oven to 350 degrees F.

Heat the olive oil in a medium saucepan over low heat. Add the onions and garlic. Cook until soft, but not brown. Add the beans, broth, thyme and tomato paste. Simmer for 15 minutes.

Lightly grease a casserole dish. Place the meat and sausage in the casserole and top with the bean mixture. Cover and bake for 30 minutes. Top with bread crumbs and bake uncovered for 20 minutes or until lightly browned.
