1/4 cup water
1 cup sugar
1/2 tsp cinnamon
1/8 tsp cream of tartar
1-1/2 cups walnut halves
1/2 tsp vanilla extract
Bring the water to a boil. Add the sugar, cinnamon and cream of tartar. Stirring occasionally, boil to 240 degrees on a candy thermometer. Remove
from the heat and add the walnuts. Stir in vanilla and continue stirring until all of the nuts are coated and mixture has sugared completely. Remove
the walnuts and arrange in a single layer on a cookie sheet. Cool for 1 hour and then store in an airtight container.
