When potatoes are fully cooked, slice down the center and scoop out pulp of each potato and add to celery and water. Add milk, butter, sour cream, bacon, green onions, 1 cup of the cheddar cheese, parsley, salt and pepper. Simmer over low heat until soup thickens. When the mixture starts to thicken, slowly add small amounts of milk to correct the consistency, being careful not to add too much.

food processor. Return the pureed mixture to the pot to thicken chowder, and stir. Ladle into individual soup bowls and sprinkle with the reserved cooked

Add the flour & water, bring to a boil, and cook for 5 minutes. Remove from the heat and serve over cooked spaghetti. Top with cheddar cheese and chopped onions if desired.
