Tip of the Week

2 pounds Farmerīs cheese
6 ounces flour
6 egg yolks
3 Tbsp sugar
1/4 tsp salt

Butter
Powdered sugar
Sour cream
Strawberry preserves

Crumble the cheese in a strainer. Press to remove as much moisture as possible. Place the cheese, flour, egg yolks, sugar, and salt in a food processor bowl; pulse until a dough forms. Shape into a 3" thick cylinder.

Wrap dough with plastic wrap and refrigerate for at least 2 hours. Heat some butter in a skillet. Cut the dough into 3/4" slices. Fry on both sides until lightly browned. Serve warm, garnished with powdered sugar, sour cream, and preserves.
