Quiche Lorraine

Quiche Lorraine

4 strips of bacon
1/4 cup chopped peeled onion
1 - 9" baked pie shell
1-1/2 cups cheddar cheese
4 eggs
1-1/3 cups milk
3/4 tsp salt
1/2 tsp dry mustard
1/8 tsp white pepper
1/8 tsp ground nutmeg

Preheat oven to 425°F.

Fry strips of bacon in a skillet until crisp, remove, crumble, and set aside.

Cook onion until transparent in small amount of the bacon drippings, drain. Sprinkle the bacon and onion over the bottom of a baked pie shell. Cover with cheddar cheese.

Blend together eggs, milk, salt, dry mustard, white pepper and nutmeg, pour over the cheese.

Bake 10 minutes. Reduce the heat to 350°F and bake for 30 to 35 minutes longer, or until the center is set.
