1 Tbsp cumin seeds
1 tsp coriander seeds
8 dried chiles, stemmed and seeded
1 Tbsp brown sugar
1 tsp ground cinnamon
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp ground red pepper
Cook cumin and coriander seeds in a small skillet over low heat, stirring constantly, for 3 minutes. Combine roasted seeds, chiles, and remaining ingredients in a blender; process until mixture is fairly smooth. Store in an airtight container.
