1 pound ground beef
1 can (15 ounce) Pinto beans, drained
1 can (10 ounce) Enchilada sauce
1 can (8 ounce) Tomato sauce
1-1/2 cup Shredded cheddar cheese, divided
1 Tbsp dried minced onion
1 cup Water
4 cups Corn chips, divided
1 cup Sour cream
Brown ground beef; drain. Transfer meat to crock pot. Add beans, enchilada sauce, tomato sauce, 1 cup of cheese, onion and 1 cup of water.
Crush 3 cups of the corn chips and add to the meat mixture.
Cover and cook on low heat for 8 to 10 hours. To serve, top with sour cream, remaining cheese, and reserved corn chips.
