1 cup sifted flour
1-1/2 tsp baking powder
1 Tbsp sugar
1/2 tsp salt
1/4 tsp cinnamon
2 Tbsp melted butter
1 egg yolk
3/4 cup milk
1 egg white, stiffly beaten
3/4 cup drained blueberries
Sift flour, baking powder, sugar, salt and cinnamon together. Add butter to the beaten egg yolk; stir in milk. Add to the dry ingredients, mixing just enough to moisten. Fold in stiffly beaten egg white. Add blueberries; mix lightly. Pour batter onto hot, greased griddle. Cook on both sides until lightly browned.
