Toad-in-the-Hole

1 cup flour
2 eggs
1 cup milk
1/2 tsp salt
Dash of pepper
1 pound pork sausage links

Combine all ingredients except sausages in a blender and blend at high speed for 10 seconds. Turn off blender and scrape down sides, then blend for 1 minute more. Refrigerate the batter for one hour.

Preheat oven to 400 degrees F.

Cook sausages according to package directions, reserve 2 Tbsp of pan drippings. Place cooked sausages in a single layer in a 6 x 10" greased baking dish and moisten with 2 Tbsp of meat drippings. Sausages should be placed 1" apart. Pour batter over the sausages and bake for 30 minutes, or until the batter has risen over the top of the pan and is crisp and brown. Serve with applesauce.
