5 pounds potatoes, peeled and diced
1-1/4 cup butter
1-3/4 tsp sugar
1-1/4 tsp salt
3/4 cup milk
2-3/4 cups flour
Boil potatoes in salted water. Drain, and then mash or whip until potatoes are lump free. While still hot, add salt, butter, sugar and milk; mix well.
Refrigerate until thoroughly chilled, then add flour. Knead until flour is incorporated. Roll to a paper thin thickness on a floured cloth, and cut into ''pancake-sized'' servings. Fry on a lightly greased griddle on top of stove until both sides are lightly browned. Can be served in place of bread, or as a treat topped with jelly or cinnamon & sugar.
