1 16 ounce jar chunky salsa
1 can whole kernel corn, drained
1 can black beans, drained & rinsed
6 boneless chicken breasts halves
Put corn, beans & 1/2 cup salsa in the bottom of a crock pot. Add the chicken, and then pour the rest of the salsa over the top. Cook on low power for 7-8 hours or until juices run clear.
You can serve the chicken over rice, or in tortillas with some sour cream and extra salsa.
