16 cups popped popcorn
2 (10 ounce) cans cashews
2 cups firmly packed brown sugar
1/2 cup butter
1/2 cup light corn syrup
1/4 tsp salt
1/4 tsp amaretto flavored oil
1/2 tsp baking soda
Preheat oven to 275 degrees F.
Combine popcorn and cashews in a large roasting pan.
In a heavy large pan, combine brown sugar, butter, corn syrup, and salt. Bring to a boil over medium heat, stirring constantly. Stop stirring, and continue to boil for 5 minutes. Remove from heat; stir in flavored oil and baking soda (mixture will foam). Pour caramel syrup over popcorn mixture; stir until well coated. Bake 45
minutes, stirring every 10 minutes. Spread on foil to cool. Store in an airtight container. Makes about 21 cups popcorn.
