2 eggs
1 cup flour
1 cup milk
2 Tbsp butter, melted
1/4 tsp salt
Lightly beat the eggs. Whisk in the flour, then stir in the milk. Whisk in the melted butter and add the salt.
Allow the batter to sit for 30 minutes in the refrigerator before using.
Heat a small skillet. Lightly oil the pan and add about 1-1/2 ounces of batter. Swirl immediately to cover the bottom of the pan. Cook for about 45 seconds, then turn and cook the other side for 45 seconds or until lightly browned.
