1 cup wild rice
8 ounces diced smoked chicken or ham
1 large tart green apple, diced
1 red bell pepper, diced
1/2 cup thinly sliced green onions
3 Tbsp minced fresh parsley
Your favorite bottled Italian dressing
Cook wild rice according to package instructions; cool to room temperature. In a bowl toss together all ingredients with the dressing. Chill well before serving.
